This drink was catapulted into existence by none other than Frank Cisneros in a futile attempt to dismantle me with his entourage and frenzied cocktail whims. In other words, it was a challenge in a string of cocktail orders and the requested spirit was Aquavit. I knew that the caraway in the aquavit could stand up to the Gran Classico Bitter, adding a new layer of flavor to its complexities. And the Lillet Blanc added just enough sweetness to make a cohesive cocktail. When I developed the drink for Iris’ menu, I halved the aquavit with a blueberry infusion that we just happened to have. The result is a mild and savory fruitiness with a bright citrus nose. Somehow, it works. The drink is so named because it is reminiscent of rye bread with the heavy presence of caraway and the obvious inclusion of that fantastic Bitter liqueur.
